Here at Eighty-Eight Brewing Company, we believe that big occasions deserve big beers, so for our fourth birthday ? we’ve amped up our classic Wave Pool Tropical IPA. Introducing Double Wave Pool, a Double IPA that surfs on the shoulders of giants.
This birthday gift starts with our usual Wave Pool malts plus a little Bru Malt to add some sweet honey notes, balancing out the bitterness that will come from many, many layers of hop additions. First come the Columbus hops followed by Citra Cryo, Mosaic Cryo and Galaxy hops to provide the signature bitterness, flavour and aroma. We then doubled down on these hops after the boil to push the tropical flavours and even snuck in a little Incognito to boost the aromas.
Keeping it going, we double dry-hopped with a mix of Spectrum and Cryo hop varietals (concentrated hop tech) that allow us to maximize our hopping rates without getting too grassy. This combination lead to our highest dry-hop rate to date.
